Is there any way of assigning members into a smaller sub-group under a larger group?

No, but with the way group work you don't need to if a user is a member of multiple groups the premissions stack.
However With our release next week we will be adding sub groups for group spaces I am not sure if that is what you are looking for but manage groups in the control panel will be changing next week.
