The pre-set sizes that the software creates are properly re-sized at the time of creation which is why they are not pixellated.  The small is based on a standard thubmsize, the medium is a standard medium size and the large is based on a percentage of the original.

If you want a size other then the ones available you may need to resize the original in a photo editor.
